14+ hour low-and-slow cooking renders fat and breaks down connective tissue regardless of marbling tier. Good Choice (or Certified Angus) is plenty.
When does Prime really matter? +
Quick-cook steaks (ribeye, NY strip) where marbling = flavor without much cook time to develop it. Grilled or sous vide is where you see the upgrade.
