Why is oil 7/8 cup for 1 cup butter? +
Butter is ~80% fat + 16% water. Oil is 100% fat. To match the pure fat content, use 7/8 cup oil for 1 cup butter. Skip this adjustment and recipes can come out greasy.
Applesauce works in cakes but not cookies? +
Right. Applesauce works in moist quick breads, muffins, cakes. It fails in cookies because there's no fat to spread and chewy structure goes flat / cakey.
Coconut oil flavor? +
Refined coconut oil is neutral. Unrefined (virgin) brings strong coconut flavor — great for tropical desserts, weird in vanilla cake.
