What's a target food cost percentage? +
Fine dining: 35-40%. Casual: 28-32%. QSR: 25-28%. Bar food / nightclub: 18-22%. Lower FC% = more margin but harder to justify pricing.
Should I include garnishes and salt? +
Yes — add a "misc & seasoning" line at ~5% of food cost. Small items add up.
What about labor cost? +
Different number — labor cost % is your prime cost (food + labor combined). Aim for prime cost under 60% for healthy margins.
